CONCEPTS AND INFORMATION
Starter cultures or starter cultures are compositions of different lactic acid bacteria (LABs), either pure or in defined combinations. Especially in the production of fermented dairy products, these supporting microorganisms provide the acidification, the fermentation and the peculiar characteristics of aroma, flavor and texture of these products.
MAIN CHARACTERISTICS
YO GB ® starter cultures are starter cultures containing freeze-dried live microorganisms for traditional use in fermented dairy products. Lyophilization maintains the original biological properties of the microorganisms, high quality, longer shelf life and do not require refrigeration.
