SAFETY AND INNOVATION
The development of our ingredients encompasses not only the selection of microorganism strains with a known track record, but also, how to improve characteristics and properties of these strains to meet specific requirements. Our work is supported by a broad platform of analysis, including genome sequencing, biochemical and bioprocess analyses.
- Widely known and known beneficial microorganisms.
- Exclusive collection of cultures with traceable history of origin, deposited in an authorized and internationally recognized depositary institution.
- Species genetically confirmed by sequencing of the 16S rRNA gene.
- Microorganisms with whole genome sequencing – complete sequencing ratifies the identification and provides detailed information regarding the safety of our microorganisms.
Our bioprocess ensures uniform process conditions at any operating volume. It encompasses the following interrelated areas:
- Selection and analysis of the microorganism, its metabolism, nutrition and growth.
- Optimization of microorganism-specific characteristics
- Conservation and activation of cultures, preparation for industrial scale multiplication.
- Cultivation in specific culture media, enabling fast and specific growth rate, different concentrations and applications.
Gabbia’s coating technology was developed to protect microorganisms while maintaining their viability and biological properties. Patent-pending, our unique technology enables the use of one or more layers of protection, varying according to the purpose of use.
- The external layers – protection against high temperatures, very low pHs, stresses during production processes and others, in addition to increasing the stability and viability of microorganisms.
- The internal layers – help in the protection against stomach acids, bile salts and digestive enzymes along the gastrointestinal tract.
Microorganisms proven to be free of plasmids and genes related to virulence and pathogenicity factors.
